SUN is weight-limited, so principals often arrive on a smaller-than-usual aircraft. We pack to the actual tail and confirm the loading leg when a heavier jet repositions.

Max takeoff weight is 95,000 lb; dual-wheel tails above that need 48-hour prior permission. Many large-cabin trips arrive on a smaller-than-usual aircraft — we pack to that galley.

Single-direction valley ops.

Approaches favor Runway 31 down the east side of the valley; departures favor Runway 13 down the west. Terrain-driven and weather-sensitive, so slots move — we tie catering to the briefed slot.

No late-night ops.

ARFF coverage is unavailable 11pm–7am, so there are effectively no overnight operations. Pre-7am departures pre-stage the evening before.

Cold-temperature airport.

Altitude correction applies at/below −13°C, and winter de-icing moves departures. Hot items pack to a 90-minute hold.

Limited parking.

The transient ramp is tight in peak ski weeks, so drop-and-go happens. We confirm whether catering loads on the drop or the return.

No US Customs.

International clears at a port of entry (Boise, Twin Falls, or SLC) first and repositions in. We stage inbound catering to that leg.
