Briefing

What we plan around at MMU.

Local constraints we build into every delivery window — curfew, customs, slots, transit, and ramp access.

01

Quieter field, same kitchen.

Morristown runs a lower-traffic corporate ramp than TEB — but menus still leave from our NYC kitchen. We build the Morris County ground leg (~50–60 min) into the delivery window so you're not chasing a late truck.

02

TEB overflow and weather days.

When Teterboro slots or winter weather compress the schedule, MMU picks up North Jersey departures. Brief us with the actual departure FBO — MMU and TEB are different ramps, different line crews.

03

Voluntary nighttime noise abatement.

MMU encourages quieter operations overnight. For very early departures we can pre-stage at Signature or Jet Aviation the evening before with insulated overnight packing — same pattern as curfew fields, without the hard shutdown.

04

Winter de-icing.

Dec–Mar de-icing can push departures 30–60 min. Hot items pack in insulated cases rated for 90-minute hold, so they don't sit waiting when the slot slips.

05

Kosher and special-dietary lead time.

Glatt-kosher routes through certified Bergen County and Five Towns kitchens on 24h lead — the same partners we use for TEB. We handle the certification chain; give us the order, not the logistics.

Local sourcing

Around MMU.

Morristown is where a lot of North Jersey flight departments keep their aircraft — quieter ramp, same NYC kitchen. Menus are built around tri-state seasonal sourcing plus whatever your principal asked for, from Hudson Valley produce to a named Manhattan restaurant dish.

Hudson Valley and Morris County produce.

Heirloom tomatoes, summer corn, fall stone fruit — direct from tri-state farms, same-day to our NYC kitchen.

Long Island seafood.

Day-boat scallops, fluke, striped bass, Peconic oysters. Routed through our NYC prep line for MMU departures.

Glatt-kosher partners.

Certified kitchens in Bergen County and the Five Towns. Pas Yisroel and Cholov Yisroel options on 24-hour lead.

NYC restaurant sourcing.

Want a specific dish from a Manhattan or Brooklyn kitchen? Name the restaurant — we source it or build a chef's version with documentation.

FAQ

FAQ

For a clean morning departure, brief us by 4pm the prior day — earlier in winter when de-icing compresses the schedule. Same-day catering down to two hours is available at both MMU FBOs, but the menu narrows inside that window. For very early wheels-up, we often stage the night before.

Always brief the actual departure airport. MMU and TEB have different FBOs, ramp access, and line crews — the kitchen is the same, but delivery routing is not. If you're repositioning between fields, tell us both legs.

Signature is our default for corporate departures on the main ramp. Jet Aviation on the east ramp is common for larger-cabin aircraft — we coordinate with whichever FBO your manifest names.

Every container ships with a passenger-level label including allergens, prefs, and origin notes. Crew gets a one-page brief; principals get a printed menu card when requested.
